THRIVE Pineapple Mango Salsa
Until recently I had never eaten a mango, and as of today I have only eaten freeze dried mangoes. I wish that I had not waited so long to give them a try, they are awesome. I started looking for recipes with mangoes and came across this recipe for a Pineapple Mango Salsa. What makes this salsa even better to me is that I can make it from all THRIVE ingredients, except for the lemon and lime juice.
If you have never had a mango you should try this yummy little fruit…..enjoy!
Ingredients:
1 cup thrive freeze dried tomato dices
1 cup thrive freeze dried mangoes
1 cup thrive freeze dried pineapple chunks
1 tbs thrive freeze dried green onion
1 tsp thrive freeze dried cilantro
1/2 tsp thrive freeze dried green chili pepper
1 tbs lemon juice
1 tbs lime juice
1 cup water
Combine all ingredients into a small bowl. Cover and refrigerate for 1-2 hours stirring a few times. Original recipe from Six Sisters Stuff

how would you serve this? is it best with crackers? chips? on a green salad? as a salad?
Hi Andrea – I served it with tortilla chips and then used the leftovers in a wrap with our chopped chicken. It is pretty good by itself too if you wanted it as a small side dish.
