Chicken Divan Casserole
This is a quick casserole that makes an excellent left over. You can also add curry powder to the recipe to give it a little extra flavor. I made this casserole with a mix of Thrive foods and fresh foods that I had on hand. You can also make this meal using all Thrive ingredients!
Ingredients:
1 cup Thrive FD chicken dices
3/4 cup Thrive FD broccoli
1 can cream of mushroom soup or Thrive Cream Soup Mix (Recipe below)
1/2 cup sour cream or Thrive sour cream powder
1/2 cup shredded cheddar cheese or Thrive FD cheddar cheese
1/4 cup dry white wine
salt, pepper & garlic
Cook rice per package instructions. While the rice is cooking combine the sour cream, cream of mushroom soup, wine and seasoning in a bowl and set aside. Spray a baking dish with nonstick cooking spray. Layer the dish with half of the cooked rice, chicken, broccoli and soup mixture. Top this layer with half of the shredded cheese and add one more layer. You can also top the casserole with bread crumbs for a nice crispy crust.
Bake on 350 for 25 minutes or until golden brown.
Thrive Cream Soup Mix:
- 1 1⁄4 c cornstarch
- 2 t italian seasoning
- 2 c thrive non-fat powdered milk
- 1⁄4 c thrive chicken bouillon
- 2 T thrive chopped onion (dh)
Instructions
Combine all ingredients in a large zip-top plastic bag and mix well.
Yield: equals 9 cans of cream soup.
TO substitute for 1 can of soup:
Combine 1/3 cup of dry mix with 1 1/4 c cold water.
Cook and stir on stove top or microwave until thickened. Add to casseroles as you would a can of soup.
