THRIVE Life Sausage Potato Hash

Ingredients
- 5 c boiling water
- 3 c thrive potato chunks
- 1 tsp thrive iodized salt
- 1⁄4 c thrive mixed bell peppers
- 1⁄2 c thrive red bell peppers (fd)
- 1⁄4 c thrive chopped onions (fd)
- 1⁄2 c thrive sausage crumbles (fd)
- 2 tsp thrive chef’s choice seasoning blend
- 1⁄4 c olive oil
- 1⁄4 c thrive green onions (fd)
- 1 tsp thrive chives (fd)
- 1 tsp thrive parsley (fd)
- 1 tsp thrive basil (fd)
Instructions
Boil the 5 cups water, place potatoes in a bowl, and pour water over potatoes. Add salt and stir. Allow to sit for 10 minutes. In a medium bowl combine peppers, onions, and sausage. Add enough warm water to barely cover vegetables and allow to sit (do not drain).
Preheat a large skillet until very hot. Drain water from potatoes, drizzle ⅔ of the olive oil into hot pan, and add potatoes to pan all at once. Press potatoes against the pan to brown, then stir occasionally, drizzling remaining oil around the side of the pan. Once browned, add vegetables and sausage mixture, seasoning, green onions, and herbs and stir well. Sauté on high heat until warm and browned.
